Creamy cheesecake pie


A simplified cheesecake that makes an eight-inch pie.

Ingredients: 

1 8 inch pie shell
8oz cream cheese
2 eggs
1T lemon juice
salt
1c sugar
1t vanilla

Instructions: 

1. Pre heat oven to 350 degrees
 2. Beat softened cream cheese until fluffy.
 3. Gradually blend in sugar, lemon juice, vanilla, and salt.
 4. Add eggs, one at a time, beating well after each.
 5. Pour filling into crumb crust.
 6. Bake in oven 25 to 30 minutes or untill set.
 7. Top with canned pie filling, or homemade fresh fruit glaze.

My Mom's been making this for years. Its a fantastic desert. Its very rich so you should avoid eating too many pieces.
